Recipes: Complete Chicken with Coucous and Shaved Salad

Grill or no grill, we've got you covered with this week's Recipe blog featuring feta/greens stuffed chicken, herbed coucous + shaved veggie salad! High protein, high fiber healthy deliciousness even when you're strapped for time during a busy work week.

You'll need:  

Chicken breasts, halved but not cut all the way through  

marinade for chicken:  

1/4 cup of white wine vinegar or mirin  

2tbsp EVOO  


1 tsp fresh thyme, chopped  

crushed/minced garlic , 1 clove 

tenderize your chicken and combine all components in a ziplock bag. Place chicken in ziplock bag and allow to sit at room temp for 20 mins to marinade. You can marinate for as long as 12 hours in the fridge.  


Stuffing for chicken:  

about 1/8 cup of feta cheese, chopped

1/2 cup spinach, chopped  

juice of 1 lemon  

1 egg  

2 heaping TBSP whole wheat flour  

2 garlic cloves, minced


a pinch of crushed red pepper  

- combine all stuffing ingredients, mixing well (I have a ninja brand "chopper" which is just short of a food processor which I like to use for this). Stuff your chicken breasts and bake in the oven at 375° until the internal temp reaches 165° 

You can also throw these on the grill- same 165° rule applies. YAY!  


Herbed Couscous:  

1 cup of couscous, cooked  

2tbsp EVOO  

S+ Lots of P!  

1 garlic clove, minced  

fresh thyme and sage, chopped  

juice of 1/2 lemon  

combine all ingredients in a serving bowl and allow to sit while preparing the remainder of your meal!   

Shaved salad:


a collection of produce which is fresh local and looking good at your grocery store this week (this is actually my fave way to make salad- what looks great in the produce dept. today?)  

here, I used a simple mix of cucumbers, tomatoes, red onions and carrots 

Rinse the watercress and place in a large bowl. Shave your veggie assortment. If you have a julienne-cutter, go to town! I am not as fancy yet and I used the largest side of an old fashioned cheese grater, which worked just about as well.  

Dressing for salad:  

like the marinade! 

1/4 cup of white wine vinegar  



1 garlic clove, minced

1/8 cup crumbled feta  

Combine all ingredients, toss your salad + enjoy
