summertime is literally my favorite time of year to make dinners at home. Produce is varietal and fresh in the summer months and there is nothing more refreshing than a crisp salad filled with all the area's freshest fruits and vegetables.
one of my very favorite combos is sweet strawberries+tangy goat cheese. This combo pairs really well with dark greens like baby spinach/baby kale. With the addition of shaved red onion and toasted almond slivers, we are able to break up the textures while also adding more protein from the almonds. You can also add grilled chicken as I did for a protein heavy meal.
For dressing, a simple red wine vinegar/EVOO/lemon juice/ S+P complements the salad quite well and makes your life as head chef much easier.
