Recipes: Spaghetti Carbonara

This one is one of my favorites for a few reasons-  it can be keto diet-friendly and gluten-free, it's cheap- even if you have to buy every single ingredient it will cost less than $20, it involves bacon AND cheese (!!!), and it's super easy. 

Here's what you'll need- 

-3  eggs + 1/2 cup of grated Parmesan cheese, mixed well and set aside in  bowl 

-one package of  "pasta"; plain or whole wheat. If cooking GF, use rice/corn pasta; if cooking for keto, shirataki noodles are awesome 👏🏻  

- 3 cloves of garlic, minced  


 -About 6 slices of bacon, cut into 1" slices


begin your pasta water while you cook the bacon. Fill a large bowl with HOT water and place aside.  Cook the pasta according to package directions, and be sure to reserve a small bowl of pasta water.   

Drain the pasta and hot water from your large bowl. Set drained pasta into hot bowl along with minced garlic and gradually mix in your cheese and egg mixture as well as your cooked bacon. You can add pasta water to the mix gradually for a creamier consistency. Season to taste with salt and pepper.
