So many of you know already that I am not particularly a meat eater. We had made this protein plenty quinoa/hard red wheatberry/black bean salad as a meatless taco filling last night. I am really loving quinoa right now-- it is an excellent source of complete proteins and will really help your body to recharge and refuel after our workouts!
One of the best things about quinoa-- it is mobile! It can be made, packed and saved, and eaten later with little effort. So today, for a nice quick and easy lunch, I put this quinoa salad atop some greens with some added avocado slices for a delicious cold salad!
